Agar is the healthiest hydrocolloid on the market

Let's start by answering the following question: what is a hydrocoid? It is a large group of polysaccharides and proteins that dissolve in water as colloids and are highly prone to forming gels. They have a lot of applications due to their special properties: they texture, thicken, bind, emulsify, stabilize, foam, form layers, gel, thin and increase adherence. Thanks to these characteristics we come across them constantly in our daily life.    

There is a wide range of hydrocolloids: Guar rubber, Konjac, gelatin, starch, agar, alginates, carrageenan...  They are of animal origin, such as gelatin, from fruit, such as pectin, from algae, such as agar or manufactured from plants, such asxanthan gum.  

Agar is the healthiest of all the options on the market, thanks to its many qualities.  With recognized healing properties in traditional Asian medicine, agar is moisturizing, easily digestible, satiating, regulates the intestinal transit, provides minerals, contains less than 0.2% fat, decreases cholesterol absorption and sugar and flushes out toxic residues. It is also the main vegan and natural alternative to animal-based gelatin.
